Heat is applied to stop oxidation, preserving freshness and stabilising the tea's character.

Fresh leaves naturally lose moisture, becoming softer while developing their aroma and flavour.

The leaves are gently rolled to shape their appearance while encouraging the release of aroma during brewing.
